Ingredients to make Simple Stove Top Soup

8 oz Acine di Pepe OR Small Shells, uncooked
2 md Acorn squash, about 1 1/2 lb each, split, peeled, seeded, and quartered
2 tb Margarine
1 lg Onion, chopped
3/4 ts Ground mace or nutmeg
1/2 ts Ground ginger
1/2 ts Cinnamon
1 c Grated carrot
1 1/2 ts Brown sugar
3 cn Low-sodium Vegetable broth, 13oz.

TOPPING
1 c Non-fat sour cream
1 tb Sugar

Directions to make Simple Stove Top Soup

Step 1:Cook squash in one inch of water in covered saucepan for 15 minutes, or until tender. Cool. Scrape out pulp and put back in pot. Add margarine, onion, carrots, sugar, mace, ginger and cinnamon. Cover and simmer gently for 10 minutes, stirring occasionally. Cook until vegetables are tender.
Step 2:Add 3 cups of the broth and puree all in a blender or food processor. Return to the pot and add remaining three cups of broth, bring to a boil and add pasta. Cook, stirring occasionally, for 10 minutes, or until pasta is done.
Step 3:Before serving, blend sour cream and sugar in a separate bowl. Put dollop on top of each bowl of soup. Serve hot.

Ingredients to make Homestyle Lobster Bisque

4 lb Whole Lobster
2 tb Olive oil
4 tb Butter
1/2 c Finely chopped onion
1/2 c Finely chopped carrot
1/2 c Finely chopped celery
1/2 ts Dried thyme
1 Bay leaf
3 Cloves finely chopped garlic
2 c Plain tomato sauce, canned is fine
1 c Dry white wine
4 c Chicken broth
2 tb Tomato paste
A dash of hot sauce
2 c Heavy cream
1/4 c Cognac
Salt & fresh ground pepper -to taste

Directions to make Homestyle Lobster Bisque

Step 1:Plunge the lobsters into boiling water for 3-4 min. Take them out of the boiling water and remove the tails. Cut the carcas into quarters, discarding the sacks. Crack the claws. Remove the meat from the tails and set aside.
Step 2:In a large pot melt the butter in the oil and sautee the carrot, onion and celery. When lightly browned, add all other ingredients except the cream and salt and pepper. Bring to a boil and cook for 45 min. Strain into another pot with a fine cheesecloth.
Step 3:Add cream and cook on med low for 10 min. Season with salt and pepper. Take the tail meat and shread it by hand, not too big. Add to the soup. Cook 5 min.on med low.

Ingredients to make Farmhouse Vegetable Lentil Soup

2 1/2 c Lentils,rinsed and drained
7 c Water or vegetable stock
2 md Onions,chopped
3 Cloves garlic,minced
Juice of one lemon
Salt and pepper to taste
2 Stalks celery,chopped
2 tb Olive oil
1 Or 2 bunches spinach

Directions to make Farmhouse Vegetable Lentil Soup

Step 1:Saute onions, garlic and celery in the olive oil, 5-10 min.
Step 2:Add lentils, and water or stock and simmer until lentils are very soft. If necessary, add more water to get soup to desired consistency.
Step 3:Add greens, salt and pepper. Simmer for 10 more minutes or until greens are tender
Step 4:Stir in lemon juice right before serving.

Ingredients to make Tomatillo Vegetable Soup

1 1/2 cups tomatillos,chopped
1 1/2 cups onion,chopped
2 cloves garlic,minced
1 teaspoon margarine
3 1/2 cups frozen corn,thawed
1 cup frozen green peas,thawed
1 cup vegetable broth
1 tablespoon cilantro
Add 3 cups vegetable broth
4 oz green chili peppers — chopped
1/4 cup whole kernel corn, frozen,thawed
1/4 cup chopped spinach
1 teaspoon sugar

Directions to make Tomatillo Vegetable Soup

Step 1:Saute tomatillos, onion and garlic in margarine five minutes. Remove to food processor and add the next four ingredients. Puree to chunky
Step 2:. Pour in pan and add 3 C chicken stock, 4 oz. diced green chilies, a little chopped spinach, a little whole kernel corn, 1 t sugar. Simmer 1 hour to all day.
Step 3:Serve topped with a dollop of NF sour cream.

Ingredients to make Chunky Vegetable Soup

3 tablespoons extra virgin olive oil
1/4 pound leeks,white only,cut into long,thin strips
1 small onion,chopped
1/2 carrot,chopped
4 garlic cloves,chopped
1/3 pound savoy cabbage,or a mixture seasonal cooking greens,thinly sliced or shredded
3 tablespoons chopped fresh cilantro leaves
3 ripe tomatoes,chopped
1 teaspoon red harissa paste
6 1/3 cups vegetable broth,approximately
15 ounces canned borlotti beans,drained or substitute pinto or a red bean

*ADDITIONS*
2/3 cup plain yogurt
1/2 lemon,for the juice
1 pinch paprika,for color
salt and black pepper,to taste

Directions to make Chunky Vegetable Soup

Step 1:Heat olive oil in a large skillet and saute the leeks and onion for 3 to 4 minutes, stirring occasionally, until softened. Add carrot and garlic. Cook for 2 minutes. Stir in the greens, coriander and tomatoes, cover and cook for 2 minutes
Step 2:. Stir in the red harissa paste (see variation), broth and beans. Cook over a medium heat for 10 minutes, stirring occasionally, until the greens are tender.
Step 3:Combine yogurt and lemon juice. Remove the soup from the heat and stir in the yogurt mixture. Season to taste. Serve immediately in large shallow bowls, sprinkled with paprika.
Step 5:**VARIATIONS. *Lowfat: use less or no oil to soften the onions. Switch to a lowfat plain yogurt then reduce the lemon juice to taste. *Use parsnip, sweet potato, or pumpkin squash instead of carrot. *TESTED with red kidney beans and spinach, we used a Herbed Harissa instead of the red; mixed it with the yogurt and added at table.
Step 6:**TIP: If you make extra soup, do not add yogurt to the reserve. Yogurt should not be heated, only warmed by the soup.
Step 7:**Harissa is a chili pepper sauce with many variations.
